Dinner & Dessert! Can you hang?

So I received a ton of requests asking for me to share my two evening recipes tonight...Dinner & Dessert!

I share because I care and believe everyone has the opportunity to seek what I have sought!

First....DINNER!!!

Zesty Lime Shrimp and Avocado Salad
  • 1 lb jumbo cooked shrimp, peeled and deveined, chopped*
  • 1 medium tomato, diced
  • 1 hass avocado, diced
  • 1 jalapeno, seeds removed, diced fine
  • 1/4 cup chopped red onion
  • 2 limes, juice of
  • 1 tsp olive oil
  • 1 tbsp chopped cilantro
  • salt and fresh pepper to taste
  • Brown Rice

In a small bowl combine red onion, lime juice, olive oil, pinch of salt and pepper. Let them marinate at least 5 minutes to mellow the flavor of the onion. 
In a large bowl combine chopped shrimp, avocado, tomato, jalapeƱo. Combine all the ingredients together, add cilantro and gently toss.Adjust salt and pepper to taste.  Serve on top of brown rice!


DESSERT!

You'll need a blender of any sort for this!
-1 cup vanilla light almond milk
- 1 frozen banana, cubed
- 2 tbsp unsweetened cocoa powder
- 1 tbsp natural peanut butter
- 1 tsp raw honey
- 4 ice cubes

Blend all together and enjoy!!!


Yummy Clean GREEN Pancakes!!!

So I've been experimenting and looking for yummy low carb options for breakfast....ran across an amazing PANCAKE RECIPE!!! Yes, I said PANCAKES!!!

You'll need a blender for this recipe!

Clean Eating Green Pancakes 
serves 1
Ingredients::
1 banana
2 eggs
1/2 tsp vanilla
dash of cinnamon
1 cup fresh spinach
1 tbsp milled flaxseed

Directions :: 
Combine all ingredients in a blender and blend until frothy and combined well. You could also use an immersion blender. Pour (roughly) 1/4 cup of mixture into a greased skillet heated to medium. Flip when the top bubbles and begins to look dry. Continue until the pancake batter is used up. It should make about 6-7 pancakes. Top with 1tbsp Raw Honey! 

These were super yummy! And amazingly healthy!

I'm a slacker!




Hey followers!
Sorry to keep you in suspense! I've been extremely busy getting crazy healthy that I haven't had a chance to blog!

Ok so let me catch you up...

To date I'm down -77lbs!!!!

I'm loving every minute of it. I started training 2x a week with the best personal trainer in the world! His name is Brian Beck...check him out at www.trainmebrian.com.  He really kicks my workout up 100 notches, I'm very thankful I found him.

These days I'm working out and taking the Nike of Nutrition and putting it in my body, AdvoCare.

Ain't No Mountain High Enough!

Hey blog world!!!

So i have to brag on myself! This week I started morning workouts! Yes...I've been getting up at 5am to head to the gym to get in 45min. I was able to do the treadmill at an incline of 5.0-10.0 at 1.8-3.2mph for 45min!!! Yes sir...high five me!

So I have embarked on a super yummy, low calorie breakfast(picture is below BUT I Added some cucumber):
Jamie's yummy breakfast sandwich:
1-whole wheat sandwich thins
2-slices turkey bacon
1-egg fried in no cal canola oil
1-slice sharp cheddar skim milk cheese
Oh yes! 245 calorie goodness!

Snack today was a cucumber. Pre lunch and post lunch.

Lunch: 1-package tuna in water, a small gala apple and Parmesan garlic wheat thins.

In between lunch and dinner I had a grape flavored Spark! Yummy!!!

Dinner: 2 oz smoked sausage, 1/2 cup Mac and cheese, 1/2 cup ranch style beans.

Tonight I broke out of my shell. I went to a free Zumba class. I actually hit it off with a lady and we talked about my process and etc. then it was time to dance! I danced my socks off for 60minutes! Zumba is so nice! It releases so much positivity because you are doing a fun dance workout. If you haven't tried Zumba, I encourage you to. You can burn up to 800calories in 1 hour!!!

Well ladies and gents...time to get rockstar sleep so I can get up again and be a superstar bright and early!

So...You think you can Zumba?!?!

Ello! <---isn't that cute? My friend Crystal says that...love it!

Today for breakfast I had a scrambled egg with kosher salt and piece of toast with 5 sprays of zero calorie parkway.

Mid morning I had 1- 100 calorie tuna salad pack.

Lunch- advocare chocolate mocha meal replacement.

Post lunch- small gala apple

Dinner- 2 buffalo chicken wraps in flour tortillas with a dab of cheese and ranch. YUMMY!!!

Tonight I got invited to a Zumba workout...I've done Zumba before and ladies/gentleman I will tell you, you can burn 800+calories in 1 hour! It's literally a full body workout. So we popped in the DVD and the room full of us non-dancers slowly learned to salsa, samba and reggae! My shirt was soaked and my hair dripping wet by the time we finished at 50minutes. We burned about 761 calories! Yes!!! 761!!!! That's literally almost my entire calorie intake for the day! It was fun!!! And FREE!!! I encourage you, if your interested, to check out your local city activity venues a lot of them offer these sessions free!

Scream...Shout...let it all out!

Hey followers! How's everyone's post Football junk food diet going?

I hope you have gotten back on track...I know when that Sunday comes every year it's hard to skip the nachos/hot dogs and hot wings. Trust me I'm right their with you. But...I will say I paid for it later that night and into the next day because when your body is not used to the greasy fatty foods for so long it really causes an uproar in your system. Needless to say...I learned my lesson!

Sooo onto today:

I started my day with 1 large scrambled egg and 1 slice white toast (was out of wheat) and 5 sprays of parkway zero calorie spray.

Pre - lunch I had a small gala apple.

Lunch consisted of my Chocolate Mocha Advocare Meal Replacement.

Post lunch I had 1- 100 calorie tuna salad packet.

Dinner: 4 oz angus top round steak seasoned with Cajun seasoning. 1 cup four cheese rice and 2/3 cup steamed green beans.

Today's total calorie count: 995

I've been really trying to eat every 2.5-3 hours. This keeps me from wanting to crash..or binge eat because in starving. A little something every couple of hours keeps your metabolism fueled and your body nicely nourished!

I'm really excited to see what my weight is on the 15th as that's picture time. Ahhh!!! I love this awesome journey I'm on!

I've been a naughty girl...

So...
I bet your wondering...
What the Heck Jamie, why haven't you been blogging?

Here's the truth;

I have been eating very bad junk the past 3 days. I don't want to let anyone down so I've been afraid to share. I promise I'm getting back on the grind tomorrow...I've made toooo much progress to relapse.
